1.黄豆提前一晚浸泡水中,泡发后放入豆浆机,水量至豆浆机水位低限,按五谷豆浆键(打得比较细腻)

2.煮好的豆浆撇去豆沫、豆渣

3.准备一个保温的容器放入内酯,内酯用40°的温水化开。比例是1000克豆浆放入3克内酯

4.煮沸的豆浆敞开盖放置5-10分钟后大约八九十度,此时将豆浆一次性缓缓倒入盛有内酯的容器中,盖上盖子静置20分钟,期间勿搅拌及移动容器

5.豆腐脑做好了,用宽铲一铲一铲挖进碗中,倒入火腿豌豆卤就可以吃了

6.火腿豌豆卤:将火腿切丁,葱、黑木耳、黄花菜、香菇切丝

7.锅中放入适量植物油,八成热时放入葱丝爆香,接着放入黑木耳、黄花菜、香菇翻炒两分钟后,加入少量红烧酱油翻拌均匀,此时往炒锅中加入适量水,水开后倒入已经调好的水淀粉(此时不要搅拌否则卤就不粘稠了),开锅后翻炒几下即可出锅
