米线100g | 牛腱子肉1块 |
鸡腿2个 | 白萝卜1根 |
鸡蛋若干 | |

香肠1截 | 黄瓜1根 |

银耳少许 | 生花生适量 |
葱2棵 | 圣女果若干 |
小红辣椒3个 | 尖椒1根 |
香菜2棵 | 料酒1大勺 |
生抽2大勺 | 醋1大勺 |

1.牛腱子肉洗净,放入开水中焯烫,变色后捞出,洗去浮沫;

2.将焯烫好的牛肉放入卤水中,再加入生抽、葱、姜、八角,大火煮开后,转小火煮40分钟,浸在汤汁中放凉;

3.鸡腿洗净,放入锅中,加水没过鸡腿;

4.放入姜片和花椒;

5.再加入适量料酒,大火煮开,转中火煮至鸡腿变色;

6.将鸡腿捞出,洗去表面浮沫;

29.将黑木耳和银耳撕碎,围在孔雀头周围;

30.围一圈黄瓜片,颈部铺上鸡丝;

36.最后放入花生碎,拌匀做为料汁,吃时浇在拼盘上即可。
小贴士:
1.米线中拌入适量油,可以使米线不粘连;
2.用葱油拌米线更香,如果嫌麻烦,可以用普通的油;
3.其他配料可以根据个人喜欢选择,注意颜色搭配;
4.料汁中加入花生碎很香,不是必须,可以省略。
