1.莜面、普通面粉、开水大致按1:1:2的比例和成光滑面团,蒙上保鲜膜或盖上盖子醒半个小时;

2. 将饧好的面团擀成厚片,两片抹油,用刀划成长条;

3.用手揪下指甲盖大小的一块面片(也可以用刀把长条再横切成方块,看个人喜欢了,没必要遵循一定之规),放在盖帘上(我用的是寿司帘),用大拇指向上推,顺势卷成小卷就是麻食了;

4.把麻食放入蒸屉中,大火蒸十分钟;

5.把蒸好的麻食平铺稍稍放凉。

6.里脊肉切薄片,用酱油、料酒、水淀粉腌制十几分钟;

7.木耳用清水泡软、洗净、撕小朵,黄瓜切片,葱、姜切片,鸡蛋炒好备用;

8.锅中六成热后,放入葱姜爆香,放入切好的肉片炒至变白,放入木耳翻炒两分钟,放入黄瓜片,炒好的鸡蛋翻炒均匀;

9.放入蒸好放凉的麻食,翻炒均匀,放入盐和鸡精调味即可。
